Chef Rio helms the kitchens at Kabuke and TANOKE where he serves up a fresh repertoire of contemporary Japanese cuisine, combining traditional Japanese techniques with modern flavors.
Chef Rio, a finalist at Japan’s World Washoku Challenge in 2015 and 2016, over time, cultivated a deep sense of respect and appreciation for Japanese cuisine, where the method of preparation focuses on using fresh ingredients and uses simple yet highly disciplined techniques to bring out the natural flavors.
Chef Rio pushes the envelope by designing a scrumptious menu encompassing an adventurous and playful mix of flavors, textures, and colors – creating the ultimate umami experience through the perfect marriage between food and Sake.
