NEW ITALIAN DELIGHTS AT DOLCE VITA, MANDARIN ORIENTAL SINGAPORE

Dolce Vita is located on level 5, Mandarin Oriental, Singapore. It presents the best of Italian cuisine, specially created with the freshest seasonal produce and finest ingredients. Diners can enjoy the spectacle of chefs at work through a stylish feature wall of vertical slit windows. There is also a wine chiller featuring over a hundred labels for wine connoisseurs.

10 new creations at the elegant Italian restaurant by the pool, Dolce Vita at Mandarin Oriental, Singapore. Start the epicurean journey with Barbabietola, a vibrant refreshing salad of baked heirloom beetroot, goat cheese mousse, walnuts and aged balsamic or Pan-seared Octopus with creamy potatoes, confit datterino and taggiasca olives.

Originating from North Italy is a classic Pappardelle. Indulge in ribbons of fresh homemade pasta with lamb ragout and crispy artichoke for textural contrast. The dish is also made decadent with a drizzle of Pecorino cheese sauce. For Mantova’s Risotto, diced pumpkin is pureed until smooth and mixed in with the rice, butter, parmesan and a splash of white wine to achieve a delicious staple of velvety consistency. On a lighter note is Fregola Sarda, where succulent poached red shrimps rest on bead-shaped pasta, elevated with basil and garlic emulsion that reflects Chef Giorgio’s finesse in balancing flavours.

A personal favourite of Chef Giorgio is Rombo. Using high-quality turbot it is pan seared and accompanied by endives, citrus and cauliflower textures, which complement the inherent sweetness of the fish. Another highlight beautifully assembled on a plate is wagyu beef tenderloin hailing from Tajima, Japan, best savoured with salt baked shallot, chickpeas and finished off with red wine jus.

Conclude the dining experience with contemporary desserts. Mango makes a refreshing treat with mousse, exotic coulis and a quenelle of passionfruit sorbet while Millefoglie is layered with custard and yield zesty notes from red fruit compote and verbena ice cream.
