
Merry “Shirazmas”: LeVeL33 Presents A Festive 3-Course Shiraz Pairing Menu
As the festive season approaches, LeVeL33 invites guests to welcome the celebrations with an exclusive three-course Shiraz Pairing Menu, priced at $158++ per person. Available from 1 to 24 December, Monday to Sunday, for both lunch and dinner, diners can enjoy a thoughtfully crafted menu by Executive Chef Jake Kowalewski paired with different styles of Shiraz.
The entrée features Beetroot & Shiraz Gin Cured Tasmanian Ocean Trout, complemented by a celeriac remoulade, housemade ricotta, and trout roe. This dish is paired with the Rockford Sparkling Shiraz from the legendary Rockford winery, and is made according to méthod traditionelle like champagne. With notes of blackberry, plum, and spice, its vibrant, fruity profile makes it an ideal choice for the celebratory occasion.
The main course highlights the pasture-fed, grain-finished petite tender Westholme Wagyu from Queensland, Australia, graded MBS4-5. Served with local mushrooms, roasted shallots, black garlic, and a truffle jus, this dish is paired with the Charles Melton The Father in Law Shiraz 2021. The Shiraz, with its deep dark fruit flavours and layers of spice and oak, complements the Wagyu’s rich marbling.
For dessert, guests will enjoy the Australian Chèvre Cheesecake, accompanied by finger lime, grapefruit, pomelo, and wild honey. This sweet finale is paired with the Prohibition Shiraz Barrel Aged G&T, an artisanal gin aged in Shiraz wine barrels, which imparts rich red wine flavours into the spirit, providing a refined complement to the citrus and honeyed notes of the cheesecake.
