XIANG XIANG HUNAN CUISINE

XIANG XIANG HUNAN CUISINE opened their first outlet in Singapore in 2009. I love their spicy and authentic Hunan dishes, which are cooked with fresh ingredients and seasoned with chili, garlic, ginger, and vinegar.
 
I recently visited their SUNTEC CITY branch and tried some of their signature dishes.
 
  • Cordyceps Flower Chicken Soup (虫草花鸡汤): This is a nourishing and aromatic soup that is good for both children and adults. The soup is made with cordyceps flowers, which are cultured mushrooms that have similar medicinal properties to the rare and expensive cordyceps. The cordyceps flowers help to replenish energy, improve eyesight, and boost the immune system. The soup also contains chicken, which is tender and flavorful, and goji berries, which add a touch of sweetness. The soup is clear and golden, and the cordyceps flowers have a crunchy and chewy texture. This soup is very comforting and satisfying, especially on a cold day.
  • Stir-fried romaine with garlic (蒜蓉油麦菜): This is a simple and delicious side dish that complements the spicy main dishes. The romaine lettuce is quickly stir-fried over very high heat with garlic and a pinch of salt and sugar. The result is a smoky, garlicky, and crunchy lettuce that still retains its bright green color. The lettuce is very refreshing and helps to balance the spiciness of the other dishes.
  • Hunan style stir-fried pork (湖南小炒肉): This is one of my favorite dishes at XIANG XIANG. The pork is tender and juicy, and the sauce is rich and flavorful. The pork is made from Iberico black pork, which is one of the top four-class meats in the world. The pork is stir-fried with white fungus, which is a precious fungus from Yunan, China, that grows at elevation 3000. The white fungus adds a crunchy and chewy texture to the dish. The dish is also seasoned with chili, garlic, ginger, and vinegar, which give it a spicy and tangy taste. This dish is very aromatic and goes well with rice. ![Hunan style stir-fried pork]
  • Pickled vegetable with fish in soup (金汤酸菜鱼): This is another delicious dish that I recommend. The soup is golden and clear, and the fish is fresh and tender. The fish is cooked with pickled vegetables, which add a sour and refreshing flavor to the soup. The soup is also infused with herbs and spices, such as star anise, cinnamon, and bay leaves, which enhance the aroma and taste of the dish. The soup is very comforting and satisfying, especially on a cold day. !
  • Beef with special chili (十八秒野山椒牛肉): This is a dish for those who love spicy food. The beef is sliced thinly and stir-fried with a special chili that is grown in the wild mountains of Hunan. The chili is very hot and numbing, and it gives the beef a fiery and exciting flavor. The beef is also marinated with soy sauce, sugar, and vinegar, which balance the spiciness and add a sweet and sour taste. The beef is very tender and succulent, and the chili is very addictive. !
