DESSERT
BURNT BROWNIE WITH COGNAC BERRY SAUCE

The shiso wrapped sea urchin and ikura, was a bite-sized explosion of creamy and briny flavours. The shiso leaf added a refreshing and aromatic touch, and the ikura provided some crunch and saltiness.

The cold angel hair was silky and smooth, and the white miso ponzu was tangy and savoury. The tempura soft shell crab was crispy and juicy, and the black fish roe added some texture and colour. The Japanese chili oil gave a nice kick of spice to the dish. It was a satisfying and well-balanced dish that showcased the fusion of cuisines. I was very impressed by the quality and presentation of the food at ENTRANCE, as well as the service and ambience.
