Culinary Harmony at Jade: A Year of the Dragon Feast
As the vibrant Year of the Dragon unfolds, Jade at The Fullerton Hotel Singapore invites diners on a culinary odyssey with their “龙年平安” (Long Nian Ping An) or “Year of the Dragon” Menu. This gastronomic journey, carefully curated by Executive Chef Leong Chee Yeng, not only showcases the pinnacle of Cantonese cuisine but also serves as a testament to the fusion of culinary artistry and cultural celebration.

A Symbolic Beginning: 龙腾迎新大捞生

The dining experience kicks off with “龙腾迎新大捞生” (Long Teng Ying Xin Da Lou Sheng) – a grandiose Prosperity Toss with vibrant and fresh ingredients symbolizing good fortune and abundance. As diners partake in the age-old tradition of tossing the Yu Sheng, the Gold Rush Smoked Salmon Yu Sheng takes centre stage. The marriage of flavours in this dish, featuring Champagne Jelly, Shallot Oil, and Kumquat Dressing, creates a harmonious dance on the palate.

A Culinary Symphony: 云龙贺新春

The next act, “云龙贺新春” (Yun Long He Xin Chun), presents a Stir-fried Australian Lobster accompanied by Silken Egg and Tomato Sauce. The delicate texture of the lobster harmonizes with the silky egg, showcasing Chef Leong’s mastery of blending flavours and textures.

The Opulence of Eight: 八珍玉食

“八珍玉食” (Ba Zhen Yu Shi) unfolds as a sumptuous medley in a richly stewed pot featuring Braised Abalone, Fish Maw, Sea Cucumber, Flower Mushrooms, Dried Scallop, Pork Tendon, Chinese Cabbage, and Yam. This dish encapsulates the essence of Cantonese cuisine – an opulent symphony of flavours and textures.

An Exquisite Union: 足足有余

“足足有余” (Zu Zu You Yu) presents the culinary prowess of Jade with Sautéed Sliced Hybrid Grouper, Foie Gras, and Teochew Black Olive. The richness of foie gras complements the succulent grouper, creating a marriage of flavours that dances on the palate.

Regal Indulgence: 凤凰献宝

“凤凰献宝” (Feng Huang Xian Bao) graces the table with Slow-cooked Chicken paired with Minced Ginger Sauce, accompanied by Poached Dried Scallop, Chinese Cabbage, and Pork Dumpling. This dish pays homage to traditional Chinese flavours, showcasing the skilful balance of textures and tastes.

Noodle Elegance: 喜庆寿面

“喜庆寿面” (Xi Qing Shou Mian) features Dragon Beard Noodles served with Braised Minced Meat Sauce, a dish that pays homage to the past while embracing modern culinary finesse.

Sweet Resplendence: 春暖花开暖心窝

The culinary journey concludes with “春暖花开暖心窝” (Chun Nuan Hua Kai Nuan Xin Wo), a trio of desserts. The Hot Cream of Almond, Bird’s Nest, Osmanthus Nian Gao, and Crunchy Chocolate Muah Chee celebrate the sweet side of Cantonese cuisine, leaving diners with a lingering sense of satisfaction.

Jade’s Year of the Dragon Menu is not just a meal; it is a celebration of culinary finesse, cultural richness, and the artistry that Chef Leong brings to the table. As diners revel in each dish, they embark on a journey that transcends the ordinary, savouring the flavours of tradition and innovation harmoniously blended at Jade.
