
Restaurant Sevens Kappo: A Modern Japanese Omakase Dining Experience
If you are looking for a modern Japanese omakase dining experience that showcases the season’s best produce and the chef’s creativity, you might want to check out Restaurant Sevens Kappo. This restaurant offers a variety of omakase menus that range from $88++ to $280++ per person, depending on the number of courses and the quality of ingredients.
I had the privilege of trying their MATSU $238++ omakase menu, which consisted of 8 courses that were beautifully presented and deliciously prepared. Here are some of the dishes that I enjoyed:
1) HASSUN (Seasonal Theme Platter)
This was a stunning platter that featured four different appetisers that showcased the chef’s skills and artistry. I especially loved the Hokkaido Oyster with Yuzu Vinegar, which was fresh and briny, with a refreshing citrus kick. The Purple Sea Urchin with Baby White Shrimp and Salmon Roe was also a delight, with a creamy and sweet flavour that contrasted well with the salty and crunchy roe. The Assorted Summer Vegetable was a colourful and crunchy mix of seasonal greens, while the Fried Small River Crab was crispy and addictive.
2) SASHIMI – 1
This was a simple but elegant dish of Torched Scallop with Shine Muscat Grape and House-made Apple Sauce. The scallop was lightly seared on the surface, retaining its juicy and tender texture. The grape added a burst of sweetness and acidity, while the apple sauce provided a smooth and tangy complement. This was a refreshing and light dish that whetted my appetite for more.
3) SASHIMI – 2
This was a more indulgent dish of four types of sashimi: Great Amberjack, Maguro Tuna Belly, Lean Tuna and Red Shrimp. Each slice of fish was thick and fresh, with a melt-in-your-mouth texture. The amberjack was mild and smooth, the tuna belly was rich and fatty, the lean tuna was firm and lean, and the red shrimp was sweet and crunchy. The sashimi was served with soy sauce, wasabi and ginger for dipping.
4) OWANMONO (Soup Dish)
This was a comforting and warming soup dish that featured a House-made Squid & Corn Ball, Black Forest Mushroom and Japanese White Gourd. The squid and corn ball was soft and bouncy, with a subtle sweetness from the corn. The mushroom added an earthy flavour, while the white gourd added a mild crunch. The soup was clear and light, with a delicate dashi flavour.
5) Signature “Snowing” Temaki
This was one of the highlights of the omakase menu, a signature dish that featured a hand roll topped with snow salt. The hand roll consisted of sushi rice, chopped tuna, cucumber and mayonnaise, wrapped in a crisp seaweed sheet. The truffle added an aromatic and luxurious touch to the hand roll, creating a contrast of textures and flavours. This was a decadent and delicious dish that I savoured every bite of.
6) AGEMONO (Fried Dish)
This was a crispy and satisfying fried dish that featured a Fried House-made Prawn Ball, Bamboo Shoot and Eggplant. The prawn ball was crunchy on the outside and juicy on the inside, with a sweet and succulent prawn flavour. The bamboo shoot added a woody flavour, while the eggplant added a soft and creamy texture. The fried dish was served with salt for seasoning.
7) DONABE (Claypot Rice)
This was a hearty and flavourful clay pot rice dish that featured Cherry Blossom Shrimp, Bamboo Shoot and Squid Ink. The rice was cooked in dashi stock until fluffy and moist, then mixed with squid ink for a dark colour and savoury taste. The cherry blossom shrimp added a pink hue and a crunchy texture to the rice, while the bamboo shoot added a tender bite. This was a filling and satisfying dish that had a nice smoky aroma from the claypot.
8) DEZATO (Dessert)
This was a sweet ending to the omakase menu, featuring Shizuoka Crown Musk Melon with Yogurt. The melon was ripe and juicy, with a fragrant and sweet flavour. The yogurt added a tangy and creamy contrast to the melon, creating a refreshing dessert that cleansed my palate.
