Singapore’s secretive Middle Eastern hideout (The Ottomani) announced the next instalment of The Nomad Series


Singapore’s most secretive Middle Eastern hideout has announced the next instalment of The Nomad Series. Launched earlier this year, the collaborative culinary series invites acclaimed chefs from across the globe to add their unique flair to The Ottomani kitchen. Nestled in the heart of the CBD, The Ottomani offers an intimate dining experience, with authentic dishes and a sophisticated atmosphere.


Following a successful Four Hands collaboration at The Ottomani last year, Ben Spalding has been invited to return to the restaurant as part of The Nomad Series and will be helming the kitchen on Wednesday 5th  and Thursday 6th September. Having finessed his craft at some of the world’s finest Michelin-starred restaurants, including The Ledbury, The Fat Duck, and L’Enclume, Ben now runs PuzzleProjects, the name behind several innovative dining concepts, including StrippedBack, which played an integral role in developing London’s high-end street food movement. Creativity is key to Chef Ben’s culinary style, with his unique approach having won him both personal and professional acclaim, including the coveted titles of one of the Times 100 Most Influential People.


During his time at The Ottomani, Ben will collaborate with resident Chef, Beau Churchill to create a unique Four Hands dining experience. Priced  at SGD$120++ per  person, the mysterious menu channels Ben’s imaginative approach and is set to keep guests  guessing. Tempting diners to taste the unknown with cryptically named dishes such as Singapore Grown, The Kebab, Rough Seas and to finish, Question Box. Those wishing to learn more about the intriguing dishes will need to reserve their tables well in advance.


Nestled in the heart of Peck Seah Street, The Ottomani is a lively yet intimate, New Middle Eastern supper club, blending a cutting-edge culinary experience with personal touches and thoughtful service. A mobile drinks trolley is rolled up to create cocktails tableside for guests, whilst a painstakingly selected wine list complements the exquisite food, with a mix of exclusive regional wines, new and old-world bottles, all chosen for their flavour profiles.

Ben Spalding will take over The Ottomani on Wednesday 5th and Thursday 6th September 2018.

Renowned for introducing strong Peruvian flavours to Australia’s food culture, Chef Alejandro Saravia not only runs his own restaurant, Pastuso, but is also a consultant chef, sought-after media spokesperson, and all-round advocate for Latin American cuisine and culture. He has a wealth of experience cooking in world-class kitchens, coupled with a profound passion for authentic food, which he seeks to share with the world.


Having started his kitchen career aged just 14 years old, Chef Eelke grew up in the Netherlands and has since continued his training at a multitude of renowned  restaurants,  including  Restaurant Vermeer, a Two Michelin Star restaurant in Amsterdam. Having moved to Indonesia aged 23 years old, Chef Eelke now creates an exhilarating farm-to-table dining experience at his own restaurant, Locavore, in Bali’s Ubud region. Locavore was named amongst Asia’s 50 Best Restaurants last year – the only Balinese venue to pick up a nod from the reputable global food awards.



After working for prestigious kitchens across London and America, Chef Ivan’s diverse background in the food industry steered him to Singapore, where he helmed The Kitchen at Bacchanalia. During his time here, the restaurant earned its first Michelin Star. At his new venture, Nouri Singapore, Chef Ivan creates original dishes influenced by the bold flavours of international cuisine.



Originally from Portland, Maine, Chef Tim began working in a small Italian restaurant aged 14 years old. The Culinary Institute graduate acquired the title of Executive Pastry Chef at Two Michelin Star restaurant, Aquavit, in New York City, aged just 21, and continued to work at prestigious restaurants across the USA. Since joining the award-winning Eat Me Restaurant in Bangkok, Chef Tim has evolved the cuisine into modern, Asian-influenced, international comfort food.
